You won’t get DSA for coeliac. I have coeliac and I got nothing for it in relation to my dsa application.
As you can manage it via eating gluten free diet nothing dsa can provide will help. There’s no specialised software or equipment that will help coeliac disease.

Coeliac disease is managed by eating a gluten free diet. If you eat gluten before an exam then that’s your fault. It’s like asking if people with a nut allergy or lactose intolerance can have extra time.
The most you will get for coeliac disease at university is permission to have your own fridge in your room. Whether or not the university will provide this or you will have to provide this is down to the accommodation team.
