like do I have to learn those long definitions in some topics for the exams. I'm taking maths alevels next summer and I was wondering if those definitions will be asked in the exam?

I've seen them ask definitions of some of the stats terms (census, stratified sampling, etc.), but I'm not sure about other definitions. What other ones do you mean?

There's a lot less of that in A-level maths compared to, say, biology. You could do all three papers and not have to answer that kind of question, and anyway they'd probably only be worth one mark.
The statistics topics probably have the most questions about definitions - as well as what's been said, you might be asked when it's suitable to use a binomial distribution, when you can approximate one with a normal distribution, that kind of thing.
