If someone did a law conversion course, which are not applicable for student loans, would they be able to get funding for an MA if they chose to do one at a later date?

Undecided as of yet. Possibly law, possibly literature.

For the conversion course? I haven’t started yet, but it would be a GDL, or more likely an SQE, as they are changing the course in the following year or so.

I'm not sure what those qualifications are - as long as the qualification you receive is not equivalent or higher than a masters then you should be fine to apply for the masters loans afterwards.
