How to write up an interview when I never recorded it - Geography NEA

So I interviewed a shopkeeper in my local area to investigate migration flows and I asked him at the beginning whether he would be happy to record the conversation. Unfortunately he refused, but I abided by his will.

I managed to take sufficient notes, but the question is how to write up my interview for referral in my NEA?

Ik but I actually have quotes from the interviewee and I want to write it down properly & make it genuine...

Do you have the responses written down verbatim? Or just the answers to his questions? If so, then you can write the question and the answer and indicate who is speaking with colons or in italics, like in a book or something. If not, write down as much as you can and then you can talk about respondee / interviewee confidentiality as a limitation of your methodology in your conclusion/ evaluation section.
