Why is Water Used in Heating and Cooling Systems?

I know that water has an exceptionally high SHC, but why does this mean it is good for using in heating and cooling systems. Water having such a high SHC means it takes much more energy to increase its temperature than it would other substances with a lower SHC. But why is this helpful in such systems?

Well think about how it might be an advantage to move a lot of heat around a building by moving a small mass (and small volume) of liquid rather than a large volume.

It's also cheap and abundant most places that people live.
