All A levels are equally difficult. You have an essay-based subject, so they shouldn't be a massive issue (assuming you couldn't take philosophy), although maths would obviously have been useful.
In terms of 'keeping your options open', I'm not sure what it means. There aren't any choices in year 1, so it's not like it limits your module choices.
Unfortunately, I don't know how you can make yourself stand out as an applicant.
