Why are companies asking agencies not to reveal who they are to candidates when placing their advertisment.? Sounds a little dodgy to me

Trust your gut instinct.
If you feel that something is seriously wrong- heed the warning and avoid.

Some large, quite well known companies have unusual recruitment practices and traditions.
Making use of agencies and gangmasters to provide themselves with the potential shielding cover of having the name of a third party outsourcing firm for some positions or large scale recruitment needs connected with the gig economy/zero hours workers on all the paperwork.
Often choosing to operate within grey areas to circumvent employment laws or restrict their tax & legal liabilities to agency contracted workers.
This can apply to large scale high street names like Sport Direct, smaller catering businesses, independent hospitality/adult entertainment operations and family owned farms requiring 40-200 fruit pickers for up to 60 days a year.
