when do you want to start studying in the UK, e.g. September 2021.

Most undergrad courses in the UK begin in Sept/Oct. So for next year you may see this referred to as '2021 entry' or alternately '2021/22 entry', (because that academic year begins in 2021 and ends in 2022).

A small number of courses have a January intake, so in some cases that might be what they are referring to.
