Start reading some basic books on set theory, logic and simple proofs. Also learn some programming and use the knowledge to build a side project - it can be anything.

But just try and enjoy your summer. You really don't want to feel burned out before you've even started!

What programming experience do you have?

If you have offers, universities should have a reading list for your course.

A project is just anything you want it to be. Write a code to do something and that is a project.
