I have already applied and received offers.
If I wanted to defer I know I have to contact the uni individually - but when do I do this?
Do I accept the offer and then ask to defer or do I ask first?

I would ask before accepting the offer, just in case they say no.
When I did it, I contacted my potential firm and insurance in case one refused or I missed my offer on results day or anything.

If you are certain its what you want, do it now.
If you wait until Results Day, if too many people have already changed they may say No.
PS. Be realistic about what a Gap Year might be like right now - limited jobs, and limited travel.

Its best to ask before you make your Firm/Insurance choices just in case any of them say No.
