I don't really understand why you can balance better on a bike that is moving faster? Please could someone explain this in terms of physcics (moments eg.)

Precession where a spinning wheel stabilizes on a plane perpendicular to its axis.
In layman's terms this means that means that a spinning wheel wants to stand up while the axle is parallel to the ground.

When the wheel is not spinning it doesn't want to stand up - I do not know the physics of it. I am only in year 9 :/
