I'd say everything you've mentioned might count, though Geography and Psychology are grey areas.

the following are all STEM a levels -

Finance - (Accounting | Business Studies)
Science {Formal Sciences} - (Computer Science | Further Mathematics | Mathematics)
Science {Natural Sciences} - (Biology | Chemistry | Geology | Physics | Psychology)
Science {Practical Sciences} - (Design and Technology | Engineering | Physical Education)

As you can see, there are quite a lot of these. STEM Subjects are primarily based around measurement + problem solving. Any subject which deals with maths, calculating or problem solving is technically a STEM subject. P.E. is especially STEM because it is a science in a practical environment. Food Technology would also be considered STEM as it is a science (although they don't offer that at A Level). Sciences are split into Formal (classroom-based), Natural (these are the primary life sciences) and Practical sciences (ones that take place in a real environment.)

Geography is a neutral subject, as it crosses into both humanities (the study of society and how people engage with the world around them) and STEM. Physical Geography would be stem as it's technically a science. However, Human geography is a humanities subjects as that focuses on how people interact with the world. So to answer this, geography could be either.
I hope that helps (sorry if it's a bit long)
