It depends on how you measure it to be honest. If you live in London for example you would walk through York city and the university and probably feel it is not particularly diverse: it's pretty typical of much of the UK outside of big cities.

86% of England & Wales is white https://www.ethnicity-facts-figures.service.gov.uk/uk-population-by-ethnicity/national-and-regional-populations/population-of-england-and-wales/latest and that seems to be reflected in York student stats: https://www.york.ac.uk/about/student-statistics/admissionsstatistics/

York is a pretty relaxed place. If you get the chance, (hard in these Covid times!) try to visit to get a feel for the place.
