I need to learn how to build better roofs in minecraft overall just the structure mix up the fram a little bit more

Fences/hatches often work quite well because of the way they anchor/align to stuff, can make some good shapes/borders that way, steel bars and such as well.
Steps to seem to be far and away the most popular though.

replace some stairs with corresponding types of blocks or half blocks, It creates more dimensions that way
and try mixing different types of wood, that way you have more colour to your roof
and try mixing different types of wood, that way you have more colour to your roof
