say you have a male friend, who used to ask you out, but, at the time, you said you were not looking to date. then, half a year later, you and your male friend start hanging out again, he tries to pay for everything (coffee, ice cream, etc.) and objects when you offer to pay. is this indicative of him continuing to like you, and being interested in a relationship, or simply being platonically kind?

honestly it depends on where you all left off from the last time he wanted to date you. if he's said that he's over you, chances are he's given up pursuing you and wants to move on into a purely platonic rs. if he hasn't stated any change in his feelings towards you its probably romantically inclined. also keep in mind that he may just have a soft spot for you, and that he may be trying to chivalrous. you could always just ask him if he has any crushes, dates, etc. and see what he says.
