In my NAT5 the chose Mice and Men for critical essay and Sail Maker for Set Text and this was all we studied.

The teacher usually picks what the class is doing.

your teacher picks what text you do from the scottish text, I did Carol Ann Duffy for my nat 5, and the text/excerpt of part of the text is chosen by the SQA, and so you won't know which exact one will come up in the exam.
and for your critical essay, again it is something the teacher chooses but the text you study cannot be the same as the one for the scottish text e.g. I had the choice between prose and drama, as we were doing poetry for the scottish text.
