My Ford automatic gearbox judders when setting off or putting pedal down, idk how to explain it like it feels like the car is wheel spinning but it’s not and feels like it jumps up a gear then down a gear and back up one again but was told by dealership this is normal but i don’t believe them

If your car is in warranty insist your dealer demos the same behaviour on one of their cars or go to another Ford dealer.
If your car is out of warranty get it into a decent automatic specialist. It may just be it needs a new fluid change but that doesn’t sound great.

Ford are the subject of multiple class action lawsuits because of major faults with their automatic gearboxes.
If it's in warranty get it into Ford ASAP. If it's out of warranty then you need to read up on whether or not Ford have an extended warranty on your gearbox. If not then you're looking at a several thousand pound repair bill.

Spoke to the dealership on the phone and he told me just last week alone they’ve took in 4 fords with gearbox issues so not a good sign lmao but says they’re super common with the power shift ones and has booked mine in tomorrow to be checked, how long do you think they’ll have my car for? I’m hoping maybe a fluid change fixes it as that won’t take long but fearing it will be the clutch or something more deep inside the gearbox.
