How to accommodate multiple stem courses in my PS?

My main aim is to study Bio Natural Sciences at Cambridge including Biochem, chem and evolution and behaviour (both because the course is broad and because I prefer more academic environments) but I also need to choose four other options. So far I've looked at Bath and York and I like the Natsci course at bath (with biology and pharmacology) and Neuroscience (specialised Natsci) at York. At other places I'm looking at biochemistry, pharmacology and neuroscience. I know they are quite similar but I'm just worried about the differences between them with the modules being quite different to write about in my personal statement.
Apologise that is quite difficult to understand- my questions are. How can I write a broad personal statement without compromising the depth? What are the best super-curriculars to include? And where else would anyone recommend that is more on the academic over social side (I have social anxiety) where people will also be in the academic mindset?
Sorry for all the questions - I'm a bit of an over thinker so I'm worrying!

I'd suggest that for a first degree, unis won't be too concerned that you demonstrate any narrow or specialist knowledge. Since the courses you mention have a fairly clear orientation i.e. the overlap between physiology and evolutionary biology, and you say you like an "academic" rather than a vocational degree, any PS that demonstrates academic interest in these areas will be fine. So if you talk about books, courses, or science news that inspires you and has prompted you to further your interest, that should be fine.
