I don't have a national insurance number yet and it said that it can take up to 16 weeks for me to get one. The problem is that the application for student finance ends in 6-7 weeks and I doubt I'll have enough time. I know I can probably apply after the due date, but how much of it will be guaranteed?

You should get it all but also in the mean time you can get a temporary National Insurance number if you contact your local job centre about the issue. That is what I got when I got my first job because I wasn't a British National or well recognised as one at the time.
