Asalamoalaikum; the coordination number tells us how many dative covalent bonds are formed with the central metal ion. If you look at the complex that forms, it has two water molecules and two ethanedioate ligans. Each water molecule forms one dative bond but the ethanedioate molecule can form two dative bonds per molecule, which gives a total of 6 dative bonds.

ethanedioate is a bidentate ligand, plus two water molecules makes a total of 6 covalent bonds to the metal ion!
