At Edinburgh University is it straight forward to change from a single degree prior to starting first year from maths to a joint degree such as maths and economics if you have the required school grades?

I don't know about switching before you start your degree. You should contact your school and ask them.

However, after first year, from my experience with CAHSS, the main requirement for switching degree would be to have taken all the compulsory courses in first year for the other degree you'd like to do. So if you aren't able to switch before first year, ensure that you take all the mandatory courses for the degree you want to do.

See the economics and maths drps here: http://www.drps.ed.ac.uk/21-22/dpt/utecnma.htm
