I'm currently looking at universities for music production with a (foundation level) and a lot of them don't require you to have a certain grade within an instrument (because of the foundation level) but for most of the higher ranked/rated schools, they expect applicants to be at at least a grade 3. I'm a self taught-ish guitar player but I havent gone further than learning to play my favourite songs and I'm also reading a book on learning guitar theory. I have no idea what grade I would be at and I just wanted to know if it was possible to reach grade 3 by next year?

yes - daughter went straight to grade 4 trumpet in a year. You would be advised to find a teacher if your target courses need this.
