Long story short,

I have a college qualification in computing but I gained that around 8 years ago, never did anything with it and now I'm at the time where I want to make an attempt at uni as I'm sick of working dead end jobs for minimum wage. I feel like if I go straight into a computing course I will be so far behind and fail as I've had so much time out.

So has anyone had plenty of time out of education and has succeeded if not is there any way I can prepare for university?

A few people on my software engineering course have been out of education for about 4 years. Also i would recommend doing a course with a foundation year as it would give you a good basis for getting back on board for education. Also congrats on striving to do better good on ya.

If you're planning on studying programming I recommend teaching yourself the basics first to make sure it's for you. Some people struggle a lot with thinking logically enough to properly structure algorithms. In my software engineering course there were people that couldn't do it and ended up wasting a lot of money.

A degree will not necessarily increase your employment opportunities in the IT / tech industry.

Suggest you apply for apprenticeships, courses focused on real-world software engineering and infrastructure, build up a profile with portfolio of work on GitHub and side projects etc. get that experience first and then you can start applying for junior roles.
