Work Visa Spain - Year Abroad

I was wondering if anyone had been through the Spanish work visa process for their year abroad yet as I am currently going through it and it's so confusing that I need some advice, on which documents need to be translated and apostilled?
Medical and criminal record certificates need Hague Apostille and sworn translation. No idea why needed, other than adding to delay and cost, as they are standard worded documents. Biggest issue is getting visa appointments at embassies. It seems nobody has planned for the obvious big increase in visa applications this summer for students for their year abroad now that the UK has left the EU. BBC is looking into it.

For Spain you need a medical certificate (with exactly the right wording which it seems some UK doctors have issues with) for the 12 month student visa.
