Hi ,
I was wondering how many quotes I should memorise for each character and theme of Much Ado About nothing (or any other book regarding GCSE English).

Find quotes that overlap themes and characters as much as possible. Try to anticipate what questions may come up in the exam. Been a while since I took English, but I recall doing PEALPEALPEALPEAL for an essay, so I guess 4 quotes for each topic? In reality, you'll just remember random stuff in the exam and wing it.
