Which is more similar to STEM: humanities or arts?

Arts is physical like STEM but humanities is about information (at least more than arts which are about creativity and practical things)

I would say definitely humanities. Subjects like Geography have a great deal of science in them when looking at the natural geographical side of it - it very much links to Biology and Chemistry. Most Geography exams also involve a mathematic element. History is perhaps not so scientific but it depends on the module - if you did medicine through time GCSE for instance that would involve a fair amount of science.

I heard a quote once along the lines of "Mathematics is the pinnacle of art and the slave of science." Mathematics can be beautiful and pointless (quadratic equations or fractals) and yet really useful (differentiation). Similarly there are elements of science which artistic and wonderful.

Humanities are well, human in their nature to an extend and dip into art and science.

Neither are particularly similar. Your comparison of art being physical like STEM seems a bit reaching as well...

Mathematics is not art. It is a science subject. To answer your other question, humanities.

Neither except for physical geography and and architecture, a humanity and an art respectively, that will entail a lot of science.
