I got an AAAB in 4 subjects:
Maths-A
Physics-A
PE-A
Economics-B
Maths at Loughborough requires AAA but I want to drop physics as I don’t think I will get an A in it. However that leaves me with AAB which isn’t good enough.
Would it be fine to take 4 subjects get the offer and drop physics so that I’m at AAB which isn’t within the requirements?

Probably not, if you can handle the workload, I'd stick with all 4 and just try to work extra hard at Physics. With a lot of "upper-tier" universities, they don't like lowering their grades because they claim that it makes it seem like they have less integrity.
