Don't want to start a new job

So currently I have a very "cushy" dead end job where there is no other departments for me to work in but I have always want to be in a more "career focussed job" so work in areas like IT, Finance or HR which this new job is in one of those areas. I'm in my 20s so I've got plenty of years of working life so if this new job doesn't work out it's not the end of the world but will mean I'll be unemployed for a short time.

There's no going back to my cushy dead end job as they have recruited. I'll try to maintain some relations with my old manager in case I need a job.

How do people control their nerves about a new job? Do you just suck it up and if it doesn't work out change jobs?
