Would this be appropriate?
Would I be allowed to do this - would unis accept it?
I can't decide between the two...

Adult nursing will give you lots of opportunities in climbing up the career ladder in whatever field you finally pick on qualifying.

You can put them both down on your application but if you prefer adult nursing then make sure your application is based solely on this as otherwise they may think you not interested in doing a nursing course, same goes to occupionational therapy on applying.
Pick the best one you want to do and then write your application and personal statement on this particular course.

Theoretically, yes.
Practically? No. Your Personal statement needs to be focused on one or the other to guarantee success.
