How stable are jobs in these fields?

How stable is a job in corporate business, corporate law, patent law, medicine, pharmacy, pharmaceutical companies, non-profit organisations(e.g. UN,ect...), academia?
Also, do any of these fields have a saturated job market where there are more graduates than jobs available? I've heard medicine is best for stability and law has a highly saturated market. I'm just wondering as I'm tryna think about what I want to do. I've applied for med school but I'm leaning more towards doing a gap year and applying for a different course... ? I'm not sure. I want a career where I can have lots of international travel and I don't feel like medicin could give me this as it's just mainly hospital/practice work although it's still very good. I was looking at jobs in corporate business/law, patent law, non-profit organisations and jobs in pharma and those also seem to appeal to me. Also, could I get into patent law after I graduate from medical school and then do law conversion course? I realise it's very important for me to secure a job after I graudate so I was wondering how stable are jobs in these fields. Thanks! Any advice greatly appreciated !
