in the employment section of the form, do they have to be paid jobs or say if i've done unpaid WEX at the same place from 2017-2019 can i include it in this section?

UCAS explains this here: https://www.ucas.com/undergraduate/applying-university/filling-your-ucas-undergraduate-application

"If you've had any paid jobs – full-time or part-time – here's where you can enter details for up to five of them. Include company names, addresses, job descriptions, and start/finish dates.

Any unpaid or voluntary work shouldn’t be included here – mention that in your personal statement. If you’ve not had any paid work experience, just leave this section blank, and mark it as complete."

The employment section is widely ignored for undergrad apps anyway, (it's only really of value if you have gaps in study). You need to include anything relevant in your PS.
