seeing as further maths counts as 2 A levels, would I be fine doing further maths, physics and EPQ. Because obviously doing 2 A levels and the epq won't get enough ucas points, but because further maths is 2 A levels, would be be OK?

Strictly speaking, Maths is an A level and Further Maths is another A level. but doing just 3 (Maths, Further Maths and Physics) is fine if you're sure that Maths/Physics. engineering/Comp Sci are the paths you want to follow - otherwise it is quite a specialised choice. Doing an EPQ as well to keep up experience in extended writing would be a good choice.

My school doesn't allow matgs and further maths, you can only do one, because All of maths content is covered in the first year of further maths, and in the second year, you do the further maths part

Whatever your school calls it, you will still be doing 2 separate A levels, one in Maths and one in Further Maths.
