I am looking for advise on how I can successfully gain experience in a working lab whilst completing my undergraduate degree.

My best advice would be to continue looking for placement/internship opportunities as normal. Companies and labs are adapting to pandemic conditions, and many of them have changed working conditions so they can still allow placements and work experience. Anecdotally, I know of a few people who have gained internship positions during the pandemic.
"Indeed" and "Gradcracker" have both been useful, depending on your specific field there are likely to be other tools more specific to you.
