I have a trial shift next week. It's about 4 hours. The interview was easy but the manager sent me a list of "sandwich formulas" and I need to learn them ( at least it says that" before the trial. It seems excessive to me

Not excessive. The reality really is that they just want someone who is competent enough to do the job at hand.

I wouldn't worry too much. Read over them as much as you can but I doubt they'll expect you to memorise every single piece of information.
