If you insist, but 'informed choices' sound like a euphemism for facilitating subjects to me.

The Russell Group dumped facilitating subjects years ago - https://www.theguardian.com/education/2019/may/23/russell-group-scraps-preferred-a-levels-list-after-arts-subjects-hit

A couple of top Unis cling to the idea of having a list of preferred subjects - they are a distinct minority.
For all Unis, what they ask for on the course page is what they want - no secrets, no information 'that only some people know' nonsense.
Marketing legislation now applies to Universities and they have to be up-front about what they want or wont accept.

. I would like to take Animal Care/Studies as I really love animals and it would be a great A-Level

It isnt an A level in 'Animal Care'. Its a BTEC - ie, its vocational training and not an academic subject.

If you take this BTEC and two sciences there may be 'overlap' in syllabus - that is a problem for any degree/course so check carefully with some Unis.

You can become a Vet Nurse without going to Uni at all - https://www.vets4petscareers.com/apprenticeships/
