So I have seen on SFE website that if you are over 25 you are classed as independent from your parents. Does this count for the next academic year as I have just turned 25 and I am in my first year after completing a foundation year last year?

I saw somewhere that you have to be 25 the first day of the academic year for which you are applying, which I will be but elsewhere I saw that you had to be 25 or over before the start of the course?

Hi, you need to be 25 or over by the start of the academic year. This means you won't need to provide your parents details in your next year application but if you have a partner then we will need their details instead.
