Can you pay for two postgraduate offer deposits then decline the other one closer to the time or when you know definitely where you want to go?

Yes, but you probably won't get the deposit refunded from the place you decline.
Do many students do this? Pay for two deposits?

Cause you spend all this time individually applying to all these universities at postgraduate and then only able to choose one to 'firm' whereas in undergraduate you applying to 5 at once via UCAS and have two options - Firm + Insurance. What happens if you have different grade requirements from different uni?

What happens if you don't accept or decline and let the deposit expiration date run through? Is it an automatic declination of the offer or if there are spaces in the degree they still let you keep the offer for now?

I would imagine many people pay two or more deposits to keep their options open. Most institutions would assume that you are declining your place through lack of action if you don't pay your deposit.
