Starch-triiodide complex hydrolysis

We were shown a photo with half seeds on a petri dish, with a starch-triiodide layer on the agar. The clear zone (slightly orange) around each seed was supposed to be evidence for the presence of amylase in the seed (in the aleurone layer). In first year, when testing for enzyme rate, we used amylase and starch but the indicator (iodine) had to be added separately because we were told it would prevent the hydrolysis of the starch into maltose units. Why was this not the case for the petri dish starch?
