Well, here I am eating my jacket potato and thought I’d ask, what do you do, eat or leave the skin? 🤔

Depends on the appearance of the potato skin and how well done it is.
I won't eat a very burnt potato skin that smells like charcoal.
Although I like my burgers and kebabs overcooked to charcoaled levels.
But not my potatoes.

I don't eat skins because of pesticides. However, I'm starting to soak potatoes in baking soda + salt to try and get rid of most of them, in order to eat the skin on homemade chips.
