I have heard law is quite. A stressful degree would I benefit from studying it part time to cope with the workload or do it full time and quicker

It's manageable if you prioritise time management. I wouldn't recommend doing any degree part-time unless you have a reason that would distract you from your studies; i.e. kids, illness, work, etc.
