When you attend open days can you ask at the university about the course you are doing and whether they make allowances if you are not taking one of the desired A-levels?

Yes

But make sure to ask both admissions and the course as different departments will be filtering applications at different universities

It depends on whether the subject is a requirement or not. Subject requirements are rarely if ever ignored. The reason for something like a Maths requirement for a course is that the university believes it is necessary to complete the course. If you dont meet it you face almost certain rejection. It is different if it is preferred rather than a requirement.

If its an essential subject then be aware that they didnt put that in the entry requirements for fun - they mean it, and you can't just 'negotiate' your way around this at an Open Day. It would be better to email Unis now to ask about this, rather than waste time/effort/money going to an Open day to discover its a flat No and it was a pointless visit.
