Why do people only do 3 A Levels if 4 Subjects are done for Scottish Highers and 6 are done for IB Diploma?

A levels are more concentrated whereas as IB is more broad. I cannot comment on the Scottish system. Most people going to universities in England and Wales have taken A levels. They are much more widely used than IB.

Because the qualifications are structured differently.
And btw, you only do 3 Higher subjects in IB, and most English Unis ask for 2 Scorttish Advanced Highers.

It doesn't.
Unis are only interested in your degree results for postgrad applications.
No-one is interested in your school performance once you have a degree.
