I am in my first year uni and was wondering whether I can sit the ucat as practice this summer, and do the test again next summer officially and have the results sent to my unis for gradmed? I just want to try the test now

I would encourage that you use other (cheaper) means to test yourself. Also UCAT is a test that can be over-prepared so I 100% would recommend against starting prep > 1 year away. 6-8 weeks is all you need.
On the other hand, 4 sittings of GAMSAT is valid each cycle so if you haven't taken the March 2022 sitting you have already missed one of them. You can still use the Sep 2022, Mar 2023 and Sep 2023 scores for 2024 entry.
