Hey!
I'm currently considering going to University next year, I'm 25 & currently working full-time, and I'm wondering what I'd need to declare my income as when the time comes to apply for student finance. Would it be the income I'm currently on, or would it be nil/zero as I would've left my job by the time I started?

I'm 25 and applied for student finance this year - they assessed my application based on my other half's income and did not take mine into account, so I assume they will assess your application with an income of nil.
