At what point in the application process is an applicant's fee status confirmed? Applying for medicine in October 2022.

When they send you the invoice

I’m sorry I didn’t see this was for Edinburgh. It may be different for Scottish universities but in RUK, it’s confirmed when they invoice you for the fees.

But don't they need to determine your fee status before being invited for interview as they have more or less places for students in each fee status?

They do.
Based on what you wrote in your UCAS application, they will determine whether you are local, RUK or International. Usually there are flags that should highlight whether you are x, y or z.
Post-interview, they will review again and your status could change.
The thing you have to remember is every uni adopts their own interpretation of the gov’t guidelines on determining your fee status. So School A could say you are home status, but School B may argue you are international.
If you are in doubt about your status, there is no harm in asking admissions at the schools you are interested in to see which category they are most likely to place you in.
