Do you have a particular area of the UK in mind? Different Sixth Form colleges will handle sports scholarships in different ways, both in terms of the application / assessment process and in terms of the associated financial value of the scholarship.

As an example, this Scholarship Application Form has a section for Sport where is asks you to list sports for which you represent your schools, and at what level. It also asks for details of sports in which you specialise, whether you represent your district / county / country, and if so for how many seasons you've done so. This web page (for the same school) says, "Shortlisted applicants will be asked to attend an afternoon at Epsom, to undertake a coaching session. It’s possible that some candidates may also be observed at a coaching session at their own club or academy. We may also seek references from your external coaches."

However, as I say, different schools and Sixth Form colleges will handle things differently.

Edited to add that this particular school say, "Whatever the sport, all candidates should be playing at representative level, or be of County standard (or equivalent) to be considered for an award."
