I have limited knowledge on the other schools, I would recommend Wilsons!! My brother also received offers from the same schools as you, but we knew a lot of close friends very very happy with Wilsons, so he chose there. He loves the place and is doing really really well. It’s a very academically focused school and it is quite strict, but if you’re academically ambitious, you’ll love it. The teachers really push you to do the best you can. Out of the three, I think Wilson’s is the best academically. But all three schools are great, and I’m sure no matter where you go, you’ll enjoy it!

Maths at Sutton is taught well and the teachers are quite good too. I'd recommend going someplace else if you're looking to do humanities because some of the teachers there for history will absolutely screw you over for coursework, and the economics department is in a bit of a situation as well, so to speak. Also, everyone there is massively weird and the boys are awful.
