I have applied to visit an offer holder day at a university but can't go anymore, how do I cancel it, or do I even need to?

Email the Uni and tell them - your invitation email will have a contact email address, or just email the admissions office.
Yes - you do need to cancel your place, so that someone else on the waiting list can go instead.
