i’m planning to resit my AS on oct/nov, will the universities know that i have resat my AS ?

They would know, because they would see from the years that you graduated a year later. So 3 instead of 2 years would tell them you retook a year.

Yes, because you are required to enter each attempt on your UCAS application.
