If I study different subjects at Alevels or Btechs and get very high grades in those results can I decide to study something different at university? E.g. business, accounting and English literature and then decide to study law at university?

Law does not require ANY specific A levels subjects. You could be doing 3 sciences and it would be fine.
You will see that the entry requirements are just listed as 3 grades ('AAA', 'ABB' etc) on Uni course pages - ie. those 3 grades in any subjects. Many people find an essay based subject at A level is useful for skills and for LNAT, but it isnt essential or even 'preferred' for any Law degrees.

Its similar for many other social science or humanities degree subjects - Politics, Sociology, Anthropology, Philosophy etc etc - no required A level subjects. Some universities require an essay subject - like English literature - or for certain subjects not to have been taken, such as art subjects, but they typically don't have a list of what to take, and the subjects you've listed would be completely fine.
